I cook very tasty eggplants like mushrooms in a pan.
Ingredients:
- Eggplant – 2 pcs.
- Onion – 2 pcs.
- Salt – to taste
- Black pepper – to taste
- Parsley – to taste
- Garlic – 2 tooth
- Eggs – 2 pcs.
Cooking:
- Wash and peel the eggplant, cut into medium cubes.
- Add 2 eggs, mix well and set aside.
- The onion needs to be peeled and also cut into a medium cube.
- We send a little vegetable oil and onion to a hot frying pan, fry until golden brown.
- When the onion is browned, add the eggplant, mix and also fry until golden brown.
- 2 minutes before cooking, salt, pepper, add garlic.
- We let it brew for 15 minutes.
